Finding authentic brisket Perth residents can trust usually involves a difficult choice. You either find quality that is impossible to access or convenience that lacks soul. Blackiron Barbecue is the realisation of a decade-long journey and a tribute to a legendary friendship.
The Pflugerville and Texas connection
The name “Blackiron” comes from a direct lineage to Brotherton’s Black Iron Barbecue in Pflugerville, Texas. It was founded by the late, legendary pitmaster John Brotherton. Our founder, Jason Linto, and John were close mates. They shared a singular obsession with the mastery of authentic barbecue. For years, they spoke about a shared vision – taking that unmistakable Texas soul and bringing it home to Perth.
A vision realised
In 2024, following John’s passing, Jason was given a solemn blessing from John’s family. He was asked to carry the torch forward. Blackiron Barbecue is the result of that blessing. It is a way to honour John’s legacy. We stay true to the methods they both respected. This isn’t just a business concept. It is a personal mission. We want locals to experience a true Texas BBQ Perth tradition. You can taste barbecue exactly as it was meant to be.
A decade of mastery
Jason didn’t just inherit a name. He earned the right to use it through a decade of discipline. His journey involved residency in both Texas and California. He worked hands-on in the United States alongside seasoned pitmasters. He mastered the gruelling reality of long, consistent cooks and fire management. He also spent nearly ten years growing the local BBQ community through BBQ Events Australia.
A smokehouse built on integrity
At Blackiron, our “Hero” is the process. We believe in doing things the hard way because it’s the only way to get the right result. This is why we invested in a first-of-its-kind, wood-fired pit design for our smokehouse Perth venue. Many venues offer a standard meat platter Perth locals find predictable. We stick to the traditional Texas service model instead. You walk up to the block. You choose your cuts. You watch them sliced fresh in front of you. It is unvarnished, authentic, and made for the middle of the table.
Experience you can taste, straight from Texas pit rooms to Perth.
